Mandarin
Mandarins are small, sweet citrus fruits with thin, easily peeled skin. Native to China, mandarins have a distinctive, aromatic flavour and are a popular snack and ingredient worldwide.
Mandarin Curd Tart
Ingredients (serves 2)

Crust
- 1 1/4 cups (155g) plain flour
- 1/3 cup (75g) vegan butter or margarine, or solid coconut oil
- 3 tbsp (20g) icing sugar
- 1 tbsp (15g) water, as needed
Mandarin Filling
- 8-10 small to medium mandarins, peeled and deseeded
- 1 cup (240g) thick canned coconut cream
- 1/3 cup (35g) cornflour
- 1/3 cup (65g) granulated sugar, or light-coloured liquid sweetener to taste
- 1-2 tbsp lemon juice, optional for a more tart filling
To Decorate (optional)
- 4 small mandarins, peeled
- 2 tbsp water
- 1 tbsp granulated sugar
- 1 tbsp orange or yellow jam, optional
Instructions:
1. Make the pastry and bake the tart shell.
2. Blend the peeled mandarins into a puree and strain to get 1 1/4 cups (300g) of mandarin juice.
3. Add the mandarin juice and other filling ingredients to a saucepan. Cook until thickened.
4. Pour the filling into the baked tart shell and chill until set.
5. Optionally, cook some mandarin segments in a sugar syrup and use to decorate the top of the tart.
