Passionfruit Curd
Ingredients
- 1 cup (240 ml) passionfruit purée (about 8-10 passionfruit)
- 1/2 cup (120 ml) maple syrup
- 1/4 cup (60 ml) coconut oil, melted
- 2 tbsp (30 ml) cornstarch
Instructions:
- In a medium saucepan, whisk together the passionfruit purée, maple syrup, and melted coconut oil.
- Whisk in the cornstarch until fully dissolved and the mixture is smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens to a curd-like consistency, about 5-7 minutes.
- Remove from heat and let cool completely before using or storing in the refrigerator.
