Passionfruit Curd 

Ingredients 

  • 1 cup (240 ml) passionfruit purée (about 8-10 passionfruit)
  • 1/2 cup (120 ml) maple syrup
  • 1/4 cup (60 ml) coconut oil, melted
  • 2 tbsp (30 ml) cornstarch

Instructions: 

  1. In a medium saucepan, whisk together the passionfruit purée, maple syrup, and melted coconut oil.
  2. Whisk in the cornstarch until fully dissolved and the mixture is smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens to a curd-like consistency, about 5-7 minutes.
  4. Remove from heat and let cool completely before using or storing in the refrigerator.
